Meatless, btw, because I don't like that chicken garlic sausage as much as I thought I would, so I skipped it, and didn't have any other meat available except foil-packed tuna which wouldn't work here.

This was VERY thrown together and goes as follows.

Cook up some noodles of your choice. I threw some pasta shells in water and microwaved it 10 minutes.

While that's going on: Put some oil in a pan. I don't know how much. Tablespoon? Two? Just put some oil in there.

Slice up a summer squash and put the slices in the oil.

Mince a couple cloves of garlic and add that.

Add some onions. I used 2 tablespoons of frozen caramelized onions (that is a whole different recipe but it really works to make a big batch ahead of time and then freeze them in small qtys so you can just pull some out for this). If you use a fresh onion you'll have to cook it more.

Some good splashes of soy sauce. Okay, more than a couple splashes. Plenty of soy sauce. For extra effect, pretend to drink it first.

Open, drain, add a can of water chestnut slices.

Add a healthy squeeze of ginger paste.

Stir everything together over enough heat to cook the squash (and onions if you're using the fresh stuff) until tender/translucent.

Drain the noodles when done, add to pan. Mix together. This is why you need extra soy, plus the veggies soak it up.

Sprinkle some mozzarella on top. Half a cup? A cup? Whatever. Let it melt into the dish.

Probable stuff I could have added if I had them: baby corn, broccoli florets, meaty bits, maybe some chicken broth to help counter the soy, zucchini, something to add some color in there 'cause it's really beige.

Anyway it was very tasty and if you add some protein it's a meal, if not it's a pasta veggie side dish.

I need to find your caramelized onion recipe that I swear you posted. Sounds like a good thing to have in the freezer.

And yes, it's been SO useful. I put these on burgers/sandwiches (after thawing/warming up of course), into stir fries, etc. They add that nice onion flavor without cooking the onions for an hour on the stove.

I ended up freezing them in a big block, then carving off "slices" from the block, but there's more efficient ways, I'm sure. I haven't tried an ice cube tray but I suppose that's one way to do it.
