I came across a method to make caramelized onions the very easy (but long-term) way: slow cooking. And it works!

8-10 cheap onions (I used 9 yellow onions), you don't need sweet onions, it's a waste of sweet onions
1 tsp butter per 2 onions
1/4 tsp salt

Peel and thinly slice the onions. If you have a slow cooker liner, use it, it'll help with cleanup. Put all the onions into the slow cooker. Melt the butter and drizzle over the onions. Sprinkle salt over onions, toss to try to combine.

Set slow cooker to low and cook for 10 hours, which makes this a great overnight recipe. Also your house will smell like onions for some time.

After cooking for 10 hours, scoop out the onions into a large colander placed over a bowl, to catch all the onion broth. I ended up with a little more than a cup of broth, but boy is it rich and tasty.

Going to freeze most of the onions because dude, this is at least a quart of caramelized onions that melt in your mouth and turned super sweet.

FRENCH ONION SOUP
1 can of Swanson beef broth
a couple generous scoops of onions (2 cups maybe?)
6 slices toasted leftover French bread
6 slices swiss cheese
6 slices provolone cheese

This made about 6 servings like this.

You need some ovenproof bowls for this. I used ramekins/custard cups placed on a baking sheet.

Warm up the broth and onions until hot. Divide the soup among the cups and top with a piece of bread. Top with swiss and then provolone.

Broil under high heat until cheese is browned.

CONCLUSION: TOTALLY DELICIOUS
